Creamy Chic Pea and Veggie Salad

The weather is warming up so I am starting to move away from the hearty meals I would normally make in the cooler months. This recipe came about because I was craving fresh veggies and I’ve been seeing similar recipes on Pinterest. Here is my version, I hope you enjoy it!

What you’ll need:

  • 1 can of garbanzo beans or chic peas (I think they’re the same?)
  • 1 bell pepper of any color
  • 1 medium sized cucumber
  • 2 tomatoes from the vine
  • 3 tablespoons of goat cheese
  • 2 tablespoons of olive oil
  • 2-3 artichoke hearts
  • Salt and pepper to taste
  • The juice of 1 lemon (up to you to add more if you’d like!)

Rinse your chic peas in a strainer with cool water to get the slimy stuff off.

Cut up your tomatoes, cucumber, bell pepper and artichoke hearts. Add these all to a medium sized bowl.

**I used grilled artichoke halves from TJ’s, I recommend these if you can find them because they are packed with flavor and they come pre-cut!

Add your olive oil, lemon juice, salt and pepper and goat cheese to your veggies and mix until creamy.

Combine your chic peas with your veggies and give it a final mix.
