Chipotle Pumpkin Seeds

Pumpkin seeds are a yummy, low cal snack that is easy to take on the go. I usually buy them by the bag at Trader Joe’s but I love to make my own when I carve up a pumpkin! Each year I like to try something different so this year I decided on a smokey, spicy combo, and they turned out amazing!

Here’s what you’ll need:

  • 3 cups of pumpkin seeds
  • 2 tablespoons of olive oil
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt

Preheat your oven to 300 degrees

Rinse your pumpkin seeds in a colander, removing any remaining gunk

Transfer to a medium sized bowl and add your olive oil, toss until completely coated

Add all of your seasonings and toss

Pour your seeds onto a greased baking sheet, spread them out so there is no seeds that are piled up

Bake for 25 minutes, mixing half way through
