I’m terrible about getting a good breakfast during the week so I figured a little meal prepping could change my ways! So I whipped up this super easy quiche and enjoyed it throughout the whole week!
Here’s what you’ll need:
- 1 pie crust, I used store bought
- 8 Eggs
- 3/4 cup of milk
- 1 bell pepper chopped
- 1 cup of spinach
- Cooking spray
- Salt & pepper
Spray your pie dish with cooking spray and line with your crust. Blind bake according to the instructions provided with your crust.
- This is the process of baking a pie crust without any filling, it works best if you’re planning on putting an uncooked filling inside your crust. I’ve included some helpful information on how to best blind back here.
Scramble your eggs with your milk and add your salt and pepper. Then add in your spinach and bell peppers.
Pour your egg mixture into your pie crust and bake for 30 minutes at 375 degrees, checking periodically.
