No Sweat Red Sauce

I am a FREAK about the texture of my food so when I came home from my trip to find my tomatoes mushy my immediate reaction was yuck! these gotta go. Then I remembered that I grabbed some pasta from a small market in Little Italy which would go perfect with a red sauce.

Here’s what you’ll need:

  • 4 -5 medium sized over ripe tomatoes, chopped
  • 1/2 a cup of Parmesan cheese
  • 1/2 tablespoon brown sugar
  • 1 cup of white wine
  • 1 tablespoon chopped fresh basil
  • Two cloves of garlic, chopped
  • 2 tablespoons olive oil
  • Salt and pepper

Add olive oil and chopped garlic to a medium sized skillet. Simmer for 2-3 minutes.

Sprinkle in salt and pepper and add fresh basil

Add your tomatoes and wine, cook for about 20 minutes or until the tomatoes are cooked completely through.

Add brown sugar to your tomatoes and simmer until your sugar is completely dissolved.

Remove your skillet from the heat and let cool for about 10-15 mins. Place your tomatoes into a blender and blend on high until completely mixed. Add Parmesan cheese and blend.

That’s it! Sauce doesn’t need to be intimidating, and of course, there are fancier ways to make red sauce but sometimes I ain’t about that life!

**For those who prefer a creamier sauce, add 1/4 of whole milk!

** Also, if you don’t love a chunky sauce, pour your sauce through a sifter or a tightly meshed colander.
