Smokey Potato Soup

My husband came home from a work trip with a nasty cold so I whipped up this super easy soup for dinner! My hubby is super picky, so the simpler the dinner the better. This soup is literally just potatoes, spices and meat if you chose to add it.

What you’ll need:

  • 2 lbs potatoes diced
  • 2 cloves of garlic diced
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 cups vegetable stock
  • 1 tablespoon of chili powder
  • 2 tablespoons of smoked paprika
  • 3 cups of whole milk
  • 1 cup parmesan cheese
  • 2 tablespoons of flour
  • Salt & pepper
  • Sour cream
  1. Add olive oil, garlic and onions to a large 6-quart sauce pan, cook until the onions are translucent.
  2. Add in potatoes, salt & pepper and flour, cook for another 3-4 minutes.
  3. Slowly stir in vegetable stock, paprika, and chili powder. Bring to a boil. Reduce heat and cook until the potatoes are tender about 20 minutes.
  4. Stir in milk and parmesan cheese, simmer for another 3-4.
  5. Spoon into a soup bowl and top with a dollop of sour cream!
  • I blended my soup with an immersion blender. This is totally optional, if you prefer a chunkier potato soup then no blending necessary.
  • You can also add any kind of meat. Since I am a vegetarian I typically make our dinners separate. I set aside my portion and then add a protein for my hubby. For this soup I added pork!
